Wagyu is relatively new to New Zealand and comes from a Japanese cattle breed famous for its nutty-flavoured, fat-marbled beef. In NZ these cattle gain their superior flavour through breeding, but also through being free to roam with their friends, as they please, picking the best grasses to eat along the way. When enjoying this product, notice the rich earthy notes that are highlighted by a bit of Central Otago wild juniper.
