Made with whole cow’s milk containing only A2 protein from the Raine Estate. It achieves a white moulds ultimate balance, as the interior is broken down to a smooth texture that is the perfect foil for the subtle earthy flavours from the rind. Made by a young french cheesemaker in NZ the name is a play on the classic Brie de Meaux (the de meaning of in french). The cheese has a perfect surface area to volume ratio (very important as the cheese is ripened firm the rind). This is important as it allows the inside to break down to a buttery, fudgey texture without turning to liquid meaning it has a good shelf life (if you don't eat it all first!).
