With our knowledge and passion we create selections for clients reflecting seasonality, geography and the establishment it is served in. We mature cheeses to ensure they are in good condition before portioning to order, to ensure ripeness.
New Zealand Cheese Ltd maintains an independent approach to cheese selection and development. We work with producers to continue to achieve exceptional quality in the cheeses we select.
James Thomas founded New Zealand Cheese Ltd in 2016. After studying science at University he began his career as a maker in Switzerland in 2012, then worked in Holland, Norway and France.
He spent 2 seasons making under Albert Alferink at Mercer Cheese while completing the NZ Cheesemaster program before 2 years in London in the role of Assistant Manager of the Wholesale department of La Fromagerie.
